Spaghetti cooked in pesto sauce is my another take on making pasta easily and yet full of taste. Pesto is tradintionally made with pine nuts, but due to unavailability, I used walnuts instead. Let’s get started.
Ingredients
- Basil, a bunch.
- walnuts, 4-5 kernels.
- extra virgin olive oil, 1/3 cup.
- parmesan cheese, 1/3 cup
- garlic, 5 cloves medium.
- salt
- pepper
- lime, few drops
- spaghetti.
- Mushrooms, finely chopped 3 buttons.
Step 1 The pesto
In a blender add basil leaves, garlic, cheese, olive oil, walnut and salt to taste. Blend to make a coarse paste.
Pesto is ready. You can add a few drops of lemon to it. This can be enjoyed over bruschettas or pizza or sandwich or just anything.
Step 2 Pasta
Boil the spaghetti in a large pan till they become eatable.
Step 3 The sauce
Saute the mushrooms in a sauce pan in olive oil. Now add the pesto sauce and stir. Add a little water to deglaze. I actually made two types of pasta, one with mushrooms and one without mushrooms.
Now strain the spaghetti and add it to the sauce. Mix well.
Step 4 Serve and EAT!
