Pesto Spaghetti with mushrooms


Spaghetti cooked in pesto sauce is my another take on making pasta easily and yet full of taste. Pesto is tradintionally made with pine nuts, but due to unavailability, I used walnuts instead. Let’s get started.

Ingredients

  1. Basil, a bunch.IMG_0066
  2. walnuts, 4-5 kernels.
  3. extra virgin olive oil, 1/3 cup.
  4. parmesan cheese, 1/3 cup
  5. garlic, 5 cloves medium.
  6. salt
  7. pepper
  8. lime, few drops
  9. spaghetti.
  10. Mushrooms, finely chopped 3 buttons.IMG_0070

Step 1 The pesto 

In a blender add basil leaves, garlic, cheese, olive oil, walnut and salt to taste. Blend to make a coarse paste. IMG_0072 IMG_0073

IMG_0075Pesto is ready. You can add a few drops of lemon to it. This can be enjoyed over bruschettas or pizza or sandwich or just anything.

Step 2 Pasta

Boil the spaghetti in a large pan till they become eatable.IMG_0071

Step 3 The sauce

Saute the mushrooms in  a sauce pan in olive oil. Now add the pesto sauce and stir. Add a little water to deglaze. I actually made two types of pasta, one with mushrooms and one without mushrooms.

Now strain the spaghetti and add it to the sauce. Mix well.

Step 4 Serve and EAT!
