Cranberry Chocolate Blondies


I must admit, this is not my recipe. I l’m learning to bake cookies after my little success at cakes, and came through this recipe by Gordon Ramsey. And it came out pretty good, packed and prepared for my wife who’s travelling to her home town for a while.

Ingredients

  1. 1 cup flour (maida)wpid-img_20150709_103822.jpg
  2. 1/4 cup sugar
  3. 1/4 cup unsalted butter or ghee.
  4. 1/4 tablespoon salt
  5. 1/4 tablespoon baking soda
  6. 1/4 tablespoon baking powder
  7. 1 egg
  8. 1/8 cup of cranberries, dried and chopped.
  9. 1/8 cup of chocolate chips or normal chocolate chopped.

Step 1 The liquid stuff

Add sugar and butter in a bowl and whisk. Keep whisking till you get a smooth pate. You can heat the butter a little to make this task easier. Now break an egg into it and mix again, thoroughly.

Step 2 The dry stuff

Now sprinkle in the salt, baking powder and baking soda and keep whisking. Continuous whisking is important to avoid any lumps, and to make sure the powdered stuff gets mixed evenly. Now sprinkle in some of the flour and whisk. Repeat this till all of the flour is mixed and the paste is falling off the whisk barely. Add cranberries and chocolate and make a uniform paste.

Step 3 The baking

Grease a baking tray, with some height, or a cake mold. Place a baking paper sheet on the top, and crease it gently along  the corners and such that it sticks evenly to the surface of the tray. This will avoid sticking of the cookies to the tray.

Place the tray is a preheated oven at 220 C for 30 minutes. Consider it baked till you see a golden brown crust on the top.

Once baked, take out the tray and let it cool down. This will provide harden the cookies and make them crisp.

Step 4 Cut and serve!
